Beverage Manager – Upscale Mediterranean Restaurant
Compensation: $85,000–$95,000 base salary + performance-based bonus

Join a well-established hospitality group with deep roots in New York City’s fine dining scene as we expand into the vibrant South Florida market. Known for delivering exceptional Mediterranean cuisine, timeless hospitality, and beautiful, transportive spaces inspired by the Greek islands, our restaurants are celebrated for both authenticity and innovation. Our newest concept in West Palm Beach will feature approximately 400 seats, an elevated, health-conscious menu, and a rooftop lounge designed to be a vibrant, high-energy scene and social hub.
Key Responsibilities
- Lead the development, implementation, and oversight of a refined wine, cocktail, and non-alcoholic beverage program that complements the Mediterranean menu
- Curate a balanced and innovative wine list, with a strong emphasis on Greek and Mediterranean varietals alongside premium global selections
- Design a cocktail program that reflects the spirit of the concept—fresh, clean, and elevated—featuring seasonal ingredients and thoughtful presentation
- Create a dynamic rooftop beverage identity, developing offerings tailored to a more energetic, social lounge environment
- Train and educate FOH staff on wine, spirits, and beverage knowledge to support confident selling and enhance the guest experience
- Collaborate with the General Manager, Executive Chef, and Director of Operations to ensure beverage offerings align with brand vision and operational goals
- Monitor inventory, purchasing, and beverage cost control systems to ensure profitability and minimize waste
- Build and maintain strong relationships with vendors and distributors to source high-quality products and secure favorable pricing
- Maintain full compliance with local alcohol regulations and safety guidelines
- Serve as a dynamic presence on the floor during service, engaging with guests, guiding selections, and elevating the overall dining and lounge experience
Qualifications
- 3–5+ years of experience managing a beverage or bar program in an upscale, high-volume restaurant or hospitality venue
- Strong knowledge of wine, particularly Greek and Mediterranean varietals, as well as spirits, cocktails, and non-alcoholic pairings
- Demonstrated creativity and success in developing beverage menus and seasonal programs
- Experience with inventory management, vendor negotiation, and cost control strategies
- Skilled in staff training, service leadership, and floor presence during high-volume shifts
- Strong communication and organizational abilities, with a polished and professional demeanor
- Passion for hospitality, attention to detail, and a genuine interest in enhancing the guest experience through curated beverage offerings
